Despite being bitter, Bitter Gourd offers variety of benefits, both nutritional and medicinal as well. It is very popular throughout India. Scrambled bitter gourd is very easy recipe. It is crispy and eaten with wheat flatbread i.e roti.
Preparation time: 35 minutes

⦁ Bitter gourd - 4
⦁ Onion - 2
⦁ Green chilli - 2
⦁ Dry red chilli - 1
⦁ Cumin seeds - 1/2 tsp
⦁ Coriander seeds - 1/2 tsp
⦁ Fenugreek seeds - 1/4 tsp (optional)
⦁ Turmeric - 1/2 tsp
⦁ Salt to taste
⦁ Cooking oil - 4 to 5 tbsp

Cut onions, bitter gourd and green chillies. Put them in a grinder jar.

Grind them coarsely.
3.
Heat oil in a pan. Add dry red chilli, cumin seeds, coriander seeds, fenugreek seeds, turmeric and fry it for few seconds.
4.
Add mixture and salt into the pan. Mix it well.
5.
Cook it with lid on for 20-25 minutes on low flame until it turns golden brown. Keep stirring in between to prevent it from burning and sticking to the bottom of the pan. Once it is cooked served with roti.
