Rice Parantha



Many times we have got leftover rice which we do not want to waste. There are many ways by which we can turn our plain steamed leftover rice into new dish. Rice parantha is one of the easiest way.

Preparation time - 20 minutes
Servings - 2 (4 paranthas)

Ingredients:


Cooked Rice - 2 cups
Wheat flour dough - 1/2 bowl
Green chillies - 2
Onion - 1 (finely chopped)
Coriander leaves - 2 tbsp (finely chopped)
Carom seeds (ajwain) - 1/2 tsp
Mint powder - 1/2 tsp
Salt to taste
Cooking oil/Ghee

Preparation method:


1.

In a bowl, add rice, onion, green chillies, coriander leaves, carom seeds, salt, mint powder and mix well.

2.

Roll out one portion of the dough into a medium size ball. Lightly dust with flour. Flatten it between your palms and fill the rice stuffing in the centre.

3.

Bring together all the sides in the centre to make a ball once again and seal tightly.

4.

Flatten it with rolling pin into a circular shape and dust it with flour whenever needed.

5.

Place it on hot pan or tawa, after few seconds apply oil on both sides and cook until it turns brown from both the sides.

6.

Repeat with the remaining dough and stuffing.


7.

Serve hot with curd/pickle/ketchup and tea.
