Spinach rice is a super food as spinach is loaded with tons of nutrients in a low calorie package. It is very simple and healthy recipe that can be served with curd and salad.
Preparation time - 30 minutes
Serving - 3
⦁ Spinach leaves - 1/2 kg
⦁ Rice - according to 3 servings
⦁ Ginger garlic paste - 1 tsp
⦁ Green chillies - 2
⦁ Onion - 2
⦁ Dry red chillies - 2
⦁ Cumin seeds - 1/2 tsp
⦁ Bay leaf - 1
⦁ Cinnamon stick - 1/2
⦁ Cloves - 3
⦁ Cardamom -2
⦁ Turmeric - 1/2 tsp
⦁ Salt to taste
⦁ Clarified butter (ghee) /cooking oil - 3 tsp

Cook rice and cool completely.

Wash spinach thoroughly and boil it in little water for 3-4 minutes. Let it cool.

Add spinach and green chillies into blender to make puree.
4.
Heat a pan with clarified butter. Add dry chiillies, cumin seeds, bay leaf, cloves, crushed cardamom and cinnamon. Saute for a minute.
5. Add ginger garlic paste and then turmeric powder until the raw smell goes off.
6.
Add chopped onions and fry until golden.
7.
Add spinach puree and salt, cook it for 2 minutes.
8.
Add boiled rice, mix thoroughly and cover it. Cook for 5 minutes. Turn off the flame and serve it hot.
